Instant Pot Tasty Lamb Spareribs

6 Smart Points

Cooking Time: 20 minutes

Serves: 2

Ingredients:

Lamb:

1 tablespoons curry powder

2 1/2 pounds lamb spareribs

2 teaspoons salt

For the sauce:

5 cloves garlic, minced

4 scallions, thinly sliced

1/2 pound tomatoes

1 tablespoon salt

1 tablespoon curry powder

1 tablespoon olive oil

1 lemon, juice only

1 large yellow onion, coarsely chopped

1 1/4 cup cilantro, chopped, divided

Instructions:

Start by seasoning the lamb ribs with 1 tsp. curry powder and 2 tsp. salt. Make sure to coat the ribs well. Place in a zip-lock and put in the fridge for a minimum of 4 hours up to a maximum of 1 day.

When cooking your lamb ribs, set your Instant Pot to “sauté” mode.

Add the oil then cook the ribs in batches till all the sides are browned then set aside on a plate.

Meanwhile, blend the onion and tomato in a blender till smooth. Add the garlic in the pot then sauté for 30 seconds.

Pour in the tomato puree, salt, lemon juice, 1 cup cilantro, and curry powder, let the mixture boil. Add then the ribs and stir to properly mix the ingredients.

Lock and close the steam valve, and set to MANUAL HIGH pressure for 20 minutes. When the timer beeps, vent the pressure using NRP method till the float valve is down.

Open the steam valve and let the remaining pressure escape.

Season with salt and pepper then add in the scallions and cilantro.

Serve and enjoy!
